Prepare Garam masala

Take 1 Combine all dry ingredients and yogurt together except chicken and mix well. Then add mix to chicken and marinate for 4 hours
Make ready 32 oz boneless, skinless medium diced chicken legs
Make ready 175 grams plain yogurt
Get 1 tbsp minced garlic
Take 1 tbsp grated ginger
Take 2 tbsp juice of fresh lime
Get 1 tbsp Garam masala
Get 1 tbsp curry paste ' not the yellow curry powder ' ( I like to use Patak's brand )
Take 1 tbsp Salt
Make ready Butter chicken sauce
Take 1 liter Neutral tomato sauce ( not the store bought jarred type )
Prepare 500 ml 35 % cream
Get 1/2 cup sweet butter
Get 1 cup finely diced white onion
Make ready 2 tbsp curry paste
Prepare 2 tbsp Garam masala
Take 1 tbsp sweet paprika or hot
Instructions to make Butter chicken ( my version ):
Preheat oven to 350
Place chicken on baking tray lined with parchment paper or foil and bake for 10-15 minutes.
In a medium sized pot on medium heat add butter, onions, garam masala, paprika and curry paste.
Sweat for 5-10 minutes. stir well as to prevent burning. Add tomato sauce then cream. and bring to a boil.
Remove from heat and add chicken. Return to stove and simmer for 5 minutes. Remove from heat and let stand for 10 minutes before serving.
