First, take a deep bowl. Sieve all the flours and add to bowl. Then add the spinach, mint, coriander, ginger garlic paste, chillies, spice powders and mix well.
Then add salt, water and 1 tsp hot oil to make batter of spreading consistency. Keep covered for 10 minutes.
Then heat a skillet or tawa on medium flame. Add baking soda, lemon juice, sugar to the mixture and whisk well.
Add spoonfuls of batter on tawa. Spread it in round shape. Pour 1 tsp oil from all sides and top. Cover and cook for 5 minutes. Flip and cook the other side till done.
