The ingredients needed to make Veg cutlet:
  1. Get as required Refined oil
  2. Make ready 3 medium boiled potatoes peeled n cubed
  3. Prepare 1 cup cooked lentil- you can use any from green gram
  4. Get 1 cup cauliflower finely chopped
  5. Take 1/2 cup peas - fresh or frozen
  6. Get 3 tsp coriander leaves finely chopped
  7. Prepare 1/2 tsp ginger garlic paste
  8. Prepare 1/2 tsp green chilli paste
  9. Get 1 medium onion
  10. Make ready 5 tsp besan
  11. Take 3 tsp water
  12. Get 2 bread slice
  13. Make ready 1/4 tsp turmeric powder
  14. Take 1 tsp red chilli
  15. Make ready 1 tsp cumin powder
  16. Prepare 1 tsp garam masala
  17. Get as per taste Salt
Steps to make Veg cutlet:
  1. Add all the veggies, spices + cooked lentils in a food processor and pulse to mix everything together. - Pulse for 2 minutes until everything is minced and nicely incorporated. - Now add 2 bread slices, water, and pulse to form a smooth mix. - Remove the kabab mix into a large bowl.
  2. Now divide the vegetable mix into equal parts (I made 24 small kebabs out of them).
  3. Then flatten the mix in between your palms and form any shape of kebabs you desire. (I made them slightly oblong).
  4. Keep the kebabs in a lined tray or plate and keep them in the fridge for 15 minutes. (this helps in kebabs holding its shape while sauteeing or frying).
  5. Heat a medium-size wok or skillet and add 1/4 cup of oil. - Let the oil heat for a minute. - Remove the uncooked vegetable kababs resting in the fridge. - Now add 3-4 kababs (depending on the size), in the hot oil and shallow fry on both sides. - Similarly, add more oil and shallow fry all the kababs.
  6. Now serve all kababs with green chutney n sauce.
